Summer Recipes

Mom decided that we all need to start a new routine for summer that includes eating at home more often. So I have spent the morning going through cookbooks and writing down recipes that I want to try. I found these two...one is great for a hot summer day and the other looks like a good idea for those of you with kids. They might like it for lunch during their summer break, and keep them busy :)

Raspberry Shrub

2 lemons
3-12 oz packages frozen red raspberries (about 9 cups)
1 1/2 cups honey
1 cup sugar
1/3 cup water
4-3 inch cinnamon sticks
1/4 cup snipped fresh rosemary or 1/2 cup snipped fresh sage (optional)
1/2 teaspoon whole cloves
3 cups ice cubes
1 liter bottle of carbonated water-chilled

1. Using a vegetable peeler, remove peel from lemons in strips; juice the lemons (you should have about 1/3 cup juice). Set peel and juice aside. In a 4-quart Dutch oven combine raspberries, honey, sugar, and the water. Cook and stir over medium heat until sugar dissolves.

2. Add strips of lemon peel, lemon juice, cinnamon, rosemary, and cloves to Dutch oven. Bring mixture just to boiling, stirring occasionally. Remove from heat. Cover and cool to room temperature. Remove and discard cinnamon sticks. Press mixture, in batches, through a fine-mesh sieve; discard solids (you should have about 4 cups syrup).

3. To serve, in a punch bowl combine syrup, and ice cubes. Slowly add carbonated water, stirring gently. Serve in small glasses or punch cups.



This one is for the kiddos:

Chicken and Biscuit Kabobs


1/2 of a 13.5 oz package (12) frozen cooked breaded chicken breast chunks (dino-nuggets:)
1 4.5 oz package (6) refrigerated buttermilk or country biscuits
1 medium zucchini and or yellow squash, cut into 3x3/4 inch strips
1/2 cup butter, melted
3 tablespoons of honey (or substitute the butter and honey, for hone butter )

Preheat oven to 400. Microwave frozen chicken for 1 minutes to soften them enough to put on skewers.

Cut each biscuit in half. Thread the biscuits, chicken, and squash on skewers, Place on ungreased cookie sheet and bake for 10 minutes or until biscuits are brown and chicken is heated thoroughly.

Drizzle honey butter mixture over top and save some for dipping.

I didn't ever think to do biscuits and chicken. I bet the kids will like that. Thanks for sharing. if you make them first, let me know if they are good.

they look very yummy it made me want so zuccini or squash, haven't had those in a long time
